The Journey Doesnt Have to Taste Bad

I have found that watching the way I eat not only helps me to feel better it also helps with my Fibromyalgia Pain.  Here is a recipe that I really enjoy in the Fall.  Nice Warm Cobbler with Coconut Milk Ice Cream is amazing.

Here is a Recipe for A Blueberry Peach Cobbler with Pecans

1/2 cup Splenda or other 1:1 Sugar Substitute

1 teaspoon cornstarch

1/2 teaspoon cinnamon

1.5 pounds fresh peaches, peeled, pitted, and thinly sliced (approximately four)

2 cups fresh or frozen blueberries

Cooking Spray

1/2 cup white rice flour

1/2 cup brown rice flour

1/4 cup oat flour

2 tablespoon Splenda

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon xanthan gum

1/8 teaspoon salt

1/4 cup chilled Earth Balance Butter Substitute

3/4 cup Almond Milk (Original Unsweetened)

1/4 cup chopped Pecans

1/2 teaspoon vanilla extract

Preheat Oven 375

Combine first 3 ingredients in a large bowl: add peaches and blueberries, tossing to coat.  Pour mixture into a 1.5 quart glass or ceramic baking dish coated with cooking spray.  Combine flours, 2 tablespoons Splenda and next four ingredients (through salt) in a bowl, stirring with a whisk.  Cut in butter substitute  with a pastry blender or 2 knives until mixture resembles coarse meal.  Add almond milk, pecans, and vanilla, stirring just until moist.  When first adding the butter substitute it may not look right yet keep going it will come together nicely when you add the milk etc.  Drop 9 spoonfuls of batter over fruit mixture; sprinkle with a bit of Splenda.  Bake at 375 for 35 minutes or until tops are browned.  It may need to bake a couple of minutes longer to insure that the topping is baked completely through.  It will depend on your oven.

Enjoy with a bit of Coconut Milk Ice Cream. I like The Vanilla.  I buy the Blissful Coconut when it is on sale.  You can get it at Safeway.  It’s the best!!!
