This week’s recipe is another Healthy Amazing Dessert…
This is an APPLE CRISP that is made with some gluten free graham crackers to give it a crunch. Having said that it is better to eat it up in a couple of days so that the graham crackers to not get soggy. It is really good served warm with some Coconut Milk Ice Cream. I love this Apple Crisp!
2 lbs Fuji apples peeled and cut into 1/2 inch thick slices this will give you approx. 5 cups of sliced apples
1 tbsp. granulated Splenda
1 tbsp. lemon juice
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg. Freshly ground nutmeg is amazing in this recipe.
1/2 cup Brown Sugar
1/4 cup Certified Gluten- Free Quick Cooking Oats ( I use Bob’s Red Mill)
2 tbsp. Brown Rice Flour
2 tbsp. Potato Starch
5 or more gluten free graham cracker sheets broken into fourths
6 tbsp. Earth Balance Buttery Spread yet non gluten, dairy free, etc.
Preheat oven to 400 degrees
Combine first 5 ingredients in a large bowl tossing to coat the apples.Spoon mixture into a large ceramic or glass baking dish coated with cooking spray.
Place brown sugar and next 4 ingredients into a food processor pulse until crackers are coarsely chopped. Add melted buttery spread; pulse 6 to 7 times or until combined.
Spoon Brown Sugar mixture over apples. Bake for 25 to 30 minutes or until topping is browned and crisp and apples are tender. This will serve approx. 8 people.
Experiment with different types of apples depending on how sweet you might like this.
